Our Story

Welcome to Pop’s Public House. Curated by owner Mike Vollmer and his family, Pop’s was founded to create a delicious, fun and family friendly Public House experience. Mike was born and raised in Gilroy and has worked in the restaurant industry for over 20 years. His eagerness and creativity are what sparked the interest in becoming a restaurant owner himself. He has a passion for creating beautiful cocktails and enjoys being able to share those with the community.

    The name Pop’s came from our love for family, specifically our dad, Steve, whose nickname is “Pop”. This is the energy and culture we wanted to establish for our restaurant: good food and drinks and good laughs. Built with the help of the entire family, Pop’s has been designed to be a place of relaxation and happiness with family and friends after a long day.
